Temperature is very important. Get an oven thermometer. This will ensure that your oven is actually at the temperature you want. Lots of ovens (especially older ones) can be 10 or more degrees off. Ovens can take 20 minutes to reach a steady temperature, so don’t forget to preheat.

All-purpose flour can be used for anything, as the name suggests. However, cake flour really does make better cakes, and bread flours really do make better breads.
